Till now, you must have heard of rava kesari or sooji ka halwa. Watermelon Kesari is a delectable dessert recipe made with a twist, it’s the sooji halwa only with a twist. Traditionally coked using semolina, sugar, nuts and raisins along with saffron; here it is cooked using watermelon juice and jaggery as well. No sugar has been used in this South Indian recipe and is truly delicious. Try this easy recipe at home and enjoy with your loved ones!

How to make Watermelon Kesari

  • Step 1

    Dry roast sooji or rava till it slightly changes colour and releases a nice aroma.

  • Step 2

    Heat ghee in a pan over medium flame and roast cashews till they turn golden brown in colour, keep aside. Also, roast raisins till they puff up and keep aside.

  • Step 3

    In the same pan, add the watermelon juice and bring it to a boil. Meanwhile, melt jaggery in another pan and strain to remove impurities.

  • Step 4

    Once the watermelon juice comes to a boil, add the roasted rava in a slow stream and keep mixing so that it does not form lumps.

  • Step 5

    Once the rava has absorbed all the liquid, add the melted jaggery and mix well. Add the roasted cashews and raisins finally.

  • Step 6

    Notes: No colour needs to be added since the jaggery and watermelon gives the dessert a perfect colour. Make sure, you do not add too much of jaggery in the watermelon kesari, add it as per your taste as the watermelon juice might make it sweeter.
